Colm O’Fearaíl grew up in County Kildare and is the founder of the Flying Squirrel plant-based cheese.
In 2019, he set up Flying Squirrel to develop his passion in crafting delicious, vegan cheese alternatives.
Flying Squirrel is built upon Colm’s love with nature, animals, the environment and the outdoors, which grew from childhood holidays on the family farm in rural Longford.
Colm decided to try a plant-based diet in 2014 and went vegan. After studying at cookery schools in Germany and the UK, Colm developed a real passion for vegan cooking.
In 2016, Colm began learning how to hand-make his artisan cheese range by studying traditional, centuries old techniques of the craft such as culturing, fermentation, coagulation and ageing.
Flying Squirrel’s Camembert alternative is made from cashews and macadamias. It has a white rind and creamy centre.
The Original Almond product is a soft cheese alternative made using a unique method of coagulation and cutting curds.
